On the slopes of the archaeological site of Monte Jato, approximately thirty kilometers away from Palermo, in the valley of Belice, on a very fertile and generous land, within an area rich in history and traditions, we find the Cantina Don Tomasi, which was born in 2004 thanks to the business venture of its co-founders and their deep and strong bond with the land: Joseph Terrasi, Gumina Ninfa, Ales Maria Rosaria, Grippi Leonardo. The winery is located within the area that includes the historic Terrasi family farm, whose culture of grapes and wine has been handed down from generation to generation, since the times of the Second World War.It has given birth to a thriving agricultural activity managed on the basis of the most modern and excellent know-how criteria. Their choice of entering the international market in 2004 was born from the conviction that it was no longer enough to produce for local markets: the brand indeed, after so many years of hard work and thanks to the experience already gained, needed to expand its horizons. Don Tomasi was finally ready to be introduced to foreign markets, in order to bring the sunshine and the scents of Sicily around the world. Sicily, an island of culture and history, a place where the hard work and sweat of its people become the lymph of a fruitful land with high quality products. There, where the wine is identified for its territorial belonging, thanks to the love and commitment of all persons working in the field. Don Tomasi awareness of the necessity to supply a market so large and demanding with high quality products, has made the commitment of its partners increasingly tough and essential to preserve their activity.Its members have always made from passion and dedication their main characteristics and strong points, unifying in a sharp-cutting way, the right balance between quality production control, integrated marketing and dynamic business. The winery is located at an average altitude of 350 meters above sea level. Its vineyards are cultivated under espalier-growing system, and its density is 4000-5000 plants per hectare. The variety of wine produced is white wine: Cataratto, Grillo, Chardonnay, Viogner and Pinot Grigio, while the wines produced with black grapes are Nero Dâ€™Avola, Syrah and Cabernet. All vines are cultivated with the most careful and scrupulous work by the partners, their families and a restrictive group of farmers of renown, experience and professionalism.The type of soil is loam and sandy. The vineyards, duly followed by competent technicians, are cultivated with controlled and certified biocompatible methods. The harvest grape is manually processed. The wine cellar is provided with the best technologies for wine-making, wine maturing and wine ageing: from the pneumatic press to the wooden barrels of Allier and to the modern bottling machines.Each process is studied and followed by phase. Consequently, the final product, ready for the consumer, is optimal and addressed to a top reference target, by expectative and competence.The increasingly inflated market portrays a particular commercial scenario for the wine-making industry. Such scenario brings in a comparison with different situations and realities whose objectives are always determined by quantity at the expense of product's quality and type.
